So; get an avocado, cut it in half, take the stone out and 'shell' the flesh from the skin. Put the light green flesh in a bowl with some olive oil, salt and pepper, and mash with a fork. Or you can use a food processor but it really doesn't take very long. Meanwhile, have a bagel toasting in the oven, and get a couple of rashers of smoked bacon crisping in a frying pan.
The paste can be as smooth or as lumpy as you want, but spread it evenly onto the bagel halves, and serve with the bacon on top. I like to add a few cherry tomatoes and a little more pepper, but this keeps me full pretty much from lunchtime to dinner!
