Add a couple of cups of rice, risotto rice is nicer because it doesn't go quite as mushy. Let it brown for a bit with the squash and onions, then add about a cup of dry white wine. Meanwhile make about 7 cups worth of chicken or vegetable stock with cubes or powder (or take your time and make a proper broth).
Once the wine has all been absorbed into the rice, start adding the broth to the mix a cup at a time, waiting for it to be absorbed into the rice between adding. This should take about 15 minutes, but keep tasting the rice to see if its cooked to how you like it. When its just a few minutes away from being ready, add a handful of parmesan shavings and stir it in evenly. It should look quite creamy and I love adding chives to this meal! Enjoy
